Description
A refreshing and tropical Hawaiian Cheesecake Salad that combines a variety of fresh fruits with a sweet honey-lime dressing and shredded coconut.
Ingredients
- 3 cups fresh pineapple, diced
- 2 cups strawberries, hulled and sliced
- 2 cups kiwi, peeled and sliced
- 1 cup blueberries
- 1 cup mandarin oranges, drained
- 1 cup shredded coconut (sweetened or unsweetened)
- 1/4 cup honey
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh mint, chopped (optional for garnish)
Instructions
- In a large mixing bowl, combine the diced pineapple, sliced strawberries, sliced kiwi, blueberries, and mandarin oranges.
- In a small bowl, whisk together the honey and lime juice until well combined.
- Drizzle the honey-lime mixture over the fruit and gently toss to coat all the fruit evenly.
- Add the shredded coconut and toss again to combine.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a gentle stir and garnish with fresh mint if desired.
Notes
- For added crunch, consider mixing in a handful of chopped nuts like macadamia or almonds.
