Description
A refreshing Mediterranean Bean Salad packed with flavor and nutrients.
Ingredients
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the chickpeas, black beans, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the bean mixture and toss gently to combine.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, and enjoy!
Notes
- For added crunch, consider adding 1/2 cup of diced bell peppers or a handful of arugula.
- Substitute feta cheese for a tangy flavor, adding about 1/2 cup crumbled feta to the salad before serving.
