A refreshing and flavorful salad packed with crunchy vegetables and a creamy peanut dressing.
Ingredients
- 2 cups mixed salad greens
- 1 cup shredded carrots
- 1 cup red cabbage, thinly sliced
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, sliced
- 1/2 cup roasted peanuts, roughly chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed salad greens, shredded carrots, red cabbage, cucumber, red bell pepper, green onions, and cilantro. Toss gently to mix the vegetables evenly.
- In a separate small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth. If the dressing is too thick, add a tablespoon of warm water to thin it out.
- Drizzle the dressing over the salad and toss until all the ingredients are well coated.
- Add the chopped peanuts on top and season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for about 15 minutes to enhance the flavors before serving.
Notes
- For added protein, consider adding grilled chicken, shrimp, or tofu to the salad.
- Substitute the peanuts with cashews or almonds for a different crunch and flavor profile.
