Tropical Coconut Pineapple Bites are a delightful treat combining the flavors of coconut and pineapple, perfect for a sweet snack or dessert.
Ingredients
- 1 cup shredded unsweetened coconut
- 1 cup crushed pineapple, drained
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- In a mixing bowl, combine the shredded coconut, crushed pineapple, almond flour, honey (or maple syrup), vanilla extract, and salt. Mix until all ingredients are well combined.
- Using your hands, form the mixture into small bite-sized balls, about 1 inch in diameter. Place the formed bites on a parchment-lined baking sheet.
- If using, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Drizzle or dip each coconut pineapple bite into the melted chocolate, then return them to the parchment-lined baking sheet.
- Refrigerate the bites for at least 30 minutes to set before serving.
Notes
- For a tropical twist, add chopped macadamia nuts or dried mango to the mixture.
- Substitute agave syrup for honey or maple syrup for a vegan option.
