Description

A refreshing drink made with cucumbers and mint, perfect for hot days.


Ingredients

  • 2 medium cucumbers, peeled and chopped
  • 1 cup fresh mint leaves, packed
  • 1/4 cup lime juice (about 23 limes)
  • 1/4 cup honey or agave syrup
  • 4 cups cold water
  • Ice cubes
  • Mint sprigs and cucumber slices for garnish

Instructions

  1. In a blender, combine the chopped cucumbers, mint leaves, lime juice, and honey. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher to remove the pulp. Use a spatula to press down and extract as much liquid as possible.
  3. Add the cold water to the pitcher and stir well to combine.
  4. Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve over ice cubes in glasses, garnished with mint sprigs and cucumber slices.

Notes

  • For a sparkling twist, replace half of the cold water with sparkling water.
  • To make it a refreshing cocktail, add a splash of gin or vodka per glass before serving.
