A refreshing and healthy salad featuring shredded chicken, creamy avocado, and a zesty tzatziki dressing.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 medium cucumber, diced
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked chicken, cucumber, avocado, cherry tomatoes, red onion, and parsley. Toss gently to mix the ingredients without mashing the avocado.
- In a separate small bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper until smooth.
- Pour the tzatziki dressing over the chicken and vegetable mixture. Gently fold everything together until well coated.
- Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
- Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
Notes
- For added crunch, include 1/4 cup of chopped bell peppers or a handful of mixed greens.
- Substitute the chicken with grilled shrimp or chickpeas for a different protein option.
