Ingredients
- 2 medium fennel bulbs, thinly sliced
- 2 medium apples (such as Granny Smith or Honeycrisp), cored and thinly sliced
- 1/2 cup walnuts, roughly chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon orange juice
- 1 teaspoon honey

Instructions
- In a large bowl, combine the sliced fennel, sliced apples, walnuts, parsley, and feta cheese (if using). Toss gently to mix the ingredients.
