Description

Ingredients

  • 2 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the cut sides of the peach halves with a little olive oil.
  3. Place the peaches cut-side down on the grill and cook for about 4-5 minutes, until grill marks appear and the peaches are slightly softened. Remove from the grill and let cool slightly.
  4. In a large bowl, combine the arugula, crumbled feta, and toasted walnuts.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  6. Slice the grilled peaches and add them to the salad mixture.
