A delicious and easy recipe for grilled pineapple that brings out the natural sweetness of the fruit.
Ingredients
- 2 ripe pineapples, peeled, cored, and cut into 1-inch thick rings
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup honey
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 1/4 cup shredded coconut (optional)
- Vanilla ice cream (for serving, optional)
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the brown sugar, cinnamon, and salt.
- Brush both sides of the pineapple rings with honey and lime juice.
- Sprinkle the brown sugar mixture evenly over both sides of the pineapple rings.
- Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized.
- If using, sprinkle shredded coconut over the pineapple during the last minute of grilling.
- Remove the grilled pineapple from the grill and let it cool slightly before serving.
- Serve warm, optionally topped with a scoop of vanilla ice cream.
Notes
- For added flavor, marinate the pineapple rings in the honey and lime juice mixture for 30 minutes before grilling.
- Try adding a sprinkle of chili powder to the brown sugar mixture for a spicy kick.
