Description

A delicious and easy recipe for Roasted Strawberry Whipped Ricotta Toast, perfect for breakfast or a snack.

Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • 1 cup ricotta cheese
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • 4 slices of thick bread (such as sourdough or whole grain)
  • 1 tablespoon olive oil
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the sliced strawberries with honey and balsamic vinegar. Spread them evenly on the prepared baking sheet.
  3. Roast the strawberries in the oven for 15-20 minutes, or until they are soft and caramelized. Remove from the oven and let cool slightly.
  4. In a separate bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Use a hand mixer or whisk to whip until smooth and creamy.
  5. While the strawberries are cooling, brush both sides of the bread slices with olive oil. Toast them in a skillet over medium heat or in a toaster until golden brown and crispy.
  6. Spread a generous layer of whipped ricotta on each slice of toasted bread. Top with the roasted strawberries.
  7. Garnish with fresh mint leaves if desired. Serve immediately.

Notes

  • For added texture, sprinkle some chopped nuts (like pistachios or walnuts) on top of the toast.
  • Substitute honey with maple syrup for a different flavor profile, or use a sugar-free sweetener for a lower-calorie option.
