Ingredients

  • 3 cups cooked and shredded chicken breast
  • 4 cups mixed salad greens (such as romaine, spinach, and cabbage)
  • 1 cup shredded carrots
  • 1 cup red bell pepper, thinly sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro, chopped
  • 1/4 cup sliced almonds
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. In a large bowl, combine the mixed salad greens, shredded chicken, carrots, red bell pepper, green onions, cilantro, sliced almonds, and sesame seeds. Toss gently to mix all the ingredients together.
  2. In a separate small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, vegetable oil, grated ginger, and minced garlic until well combined.
