Description

Savory Chicken Teriyaki Noodles is a flavorful dish featuring tender chicken, fresh vegetables, and udon noodles tossed in a delicious teriyaki sauce.


Ingredients

  • 8 ounces of udon noodles
  • 1 pound of boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 cup of broccoli florets
  • 1 cup of sliced bell peppers (any color)
  • 1/2 cup of sliced carrots
  • 3 cloves of garlic, minced
  • 1/4 cup of soy sauce
  • 2 tablespoons of honey
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of cornstarch mixed with 2 tablespoons of water
  • 1 teaspoon of sesame oil
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Add the broccoli, bell peppers, and carrots to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  4. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  5. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch mixture. Pour this sauce over the chicken and vegetables in the skillet.
  6. Cook for another 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
  7. Add the cooked udon noodles to the skillet and toss everything together until well combined. Drizzle with sesame oil and mix again.
  8. Serve hot, garnished with sliced green onions and sesame seeds.

Notes

  • For a vegetarian option, substitute the chicken with tofu or tempeh and use vegetable broth instead of chicken broth.
