Ingredients
- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sour cream
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 2 tablespoons lime juice
- 1 clove garlic, minced
- Salt to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add the shredded chicken, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Stir to combine and cook for about 5 minutes, until heated through.
- While the chicken is cooking, prepare the Avocado Lime Sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning if needed.
- Warm the tortillas in a dry skillet or microwave until pliable.
- To assemble the tacos, place a portion of the spiced chicken on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
- Drizzle the Avocado Lime Sauce over the top of each taco. Serve immediately.
