Description

A delicious and easy-to-make Cheesy Broccoli Chickpea Rice Casserole that combines nutritious ingredients for a wholesome meal.


Ingredients

  • 1 cup of cooked rice
  • 1 can of chickpeas, drained and rinsed
  • 2 cups of broccoli florets
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1/2 cup of milk
  • 1/4 cup of breadcrumbs
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, chickpeas, broccoli, and half of the cheese.
  3. Add the milk, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Top with the remaining cheese and sprinkle breadcrumbs over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
