A delicious and easy-to-make Cheesy Broccoli Chickpea Rice Casserole that combines nutritious ingredients for a wholesome meal.
Ingredients
- 1 cup of cooked rice
- 1 can of chickpeas, drained and rinsed
- 2 cups of broccoli florets
- 1 cup of shredded cheese (cheddar or your choice)
- 1/2 cup of milk
- 1/4 cup of breadcrumbs
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked rice, chickpeas, broccoli, and half of the cheese.
- Add the milk, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Top with the remaining cheese and sprinkle breadcrumbs over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a vegan option, use plant-based cheese and milk.
- Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
