Ingredients

  • 2 packs of ramen noodles
  • 1 cup shredded carrots
  • 1 cup red cabbage, shredded
  • 1 bell pepper, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro, chopped
  • 1/4 cup sesame seeds
  • 1/2 cup slivered almonds
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil

Instructions

  1. Cook the ramen noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked ramen noodles, shredded carrots, red cabbage, bell pepper, green onions, and cilantro.
  3. In a separate bowl, whisk together the soy sauce, rice vinegar, vegetable oil, sugar, and sesame oil to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
