Description

A delicious recipe for grilled chicken thighs marinated in a flavorful mixture and served with a fresh salmoriglio sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 lemon, sliced for garnish

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, black pepper, and red pepper flakes to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  5. While the chicken is grilling, prepare the salmoriglio sauce by mixing together the chopped parsley, basil, and a drizzle of olive oil in a small bowl.
  6. Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes. Serve topped with the salmoriglio sauce and lemon slices.
