Description

A delicious recipe for Greek Chicken Meatballs served with a refreshing Tzatziki Sauce.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, black pepper, red pepper flakes (if using), and egg. Mix until well combined.
  3. Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the meatballs on the prepared baking sheet.
  4. Drizzle the olive oil over the meatballs. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  5. While the meatballs are baking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
  6. Once the meatballs are done, remove them from the oven and let them cool slightly before serving with the tzatziki sauce.

Notes

  • For added flavor, try mixing in some crumbled feta cheese into the meatball mixture.
  • Serve the meatballs in pita bread with fresh vegetables and additional tzatziki for a delicious wrap.
