Description
A delicious recipe for Greek Chicken Meatballs served with a refreshing Tzatziki Sauce.
Ingredients
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 large egg
- 1 tablespoon olive oil
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, black pepper, red pepper flakes (if using), and egg. Mix until well combined.
- Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the meatballs on the prepared baking sheet.
- Drizzle the olive oil over the meatballs. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
- While the meatballs are baking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
- Once the meatballs are done, remove them from the oven and let them cool slightly before serving with the tzatziki sauce.
Notes
- For added flavor, try mixing in some crumbled feta cheese into the meatball mixture.
- Serve the meatballs in pita bread with fresh vegetables and additional tzatziki for a delicious wrap.
