A delicious and easy-to-make Cheesy Chicken and Zucchini Bake that combines tender chicken, fresh zucchini, and a blend of cheeses for a comforting dish.
Ingredients
- 2 cups cooked chicken, shredded
- 2 medium zucchinis, sliced into thin rounds
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup fresh basil, chopped (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
- In a large mixing bowl, combine the shredded chicken, sliced zucchinis, cherry tomatoes, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
- In a separate bowl, mix the cream cheese, half of the mozzarella cheese, and half of the Parmesan cheese until smooth.
- Add the cheese mixture to the chicken and zucchini mixture, stirring until everything is evenly coated.
- Pour the mixture into the prepared baking dish, spreading it out evenly. Top with the remaining mozzarella and Parmesan cheeses.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for 5 minutes. Garnish with fresh basil if desired before serving.
Notes
- For added flavor, consider mixing in some sautéed onions or bell peppers with the chicken and zucchini.
- To make it a complete meal, serve the bake over a bed of cooked quinoa or rice.
