- 2 pounds boneless, skinless chicken thighs
- 1/4 cup hot honey (store-bought or homemade)
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for extra heat)
Instructions
- In a large bowl, whisk together the hot honey, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, black pepper, and red pepper flakes if using.
- Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
- Place the chicken thighs on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Drizzle additional hot honey over the chicken before serving, if desired.

- For a smoky flavor, try adding a few drops of liquid smoke to the marinade.
- If you prefer a milder version, substitute regular honey for hot honey and add a pinch of cayenne pepper for a gentle kick.
