Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup broccoli florets
- 1 cup bell peppers, diced (any color)
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried Italian herbs (optional)
- Juice of 1 lemon
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add the broccoli, bell peppers, zucchini, and cherry tomatoes to the skillet. Stir well to combine.
- Cook for an additional 5-7 minutes, or until the vegetables are tender but still crisp.
- Sprinkle the dried Italian herbs over the mixture, if using, and squeeze the lemon juice on top. Stir to combine and cook for another minute.
- Remove from heat and serve warm.
Notes
- For a spicier kick, add red pepper flakes when seasoning the chicken.
- You can substitute the chicken with shrimp or tofu for a different protein option.
