Description

A delicious and easy Mediterranean Ground Chicken Skillet recipe that combines ground chicken with fresh vegetables and feta cheese.


Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
  2. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until the peppers are tender.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 6-8 minutes.
  4. Stir in the cherry tomatoes, Kalamata olives, oregano, basil, salt, and pepper. Cook for another 5 minutes until the tomatoes are softened and the flavors meld together.
  5. Remove from heat and sprinkle the crumbled feta cheese on top. Garnish with fresh parsley before serving.

Notes

  • For added heat, include a pinch of red pepper flakes when cooking the vegetables.
