Description
A delicious and easy Mediterranean Ground Chicken Skillet recipe that combines ground chicken with fresh vegetables and feta cheese.
Ingredients
- 1 pound ground chicken
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until the peppers are tender.
- Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 6-8 minutes.
- Stir in the cherry tomatoes, Kalamata olives, oregano, basil, salt, and pepper. Cook for another 5 minutes until the tomatoes are softened and the flavors meld together.
- Remove from heat and sprinkle the crumbled feta cheese on top. Garnish with fresh parsley before serving.
Notes
- For added heat, include a pinch of red pepper flakes when cooking the vegetables.
- Substitute ground turkey or beef for the ground chicken for a different flavor profile.
