  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  2. Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.
  3. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  4. Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow the mixture to simmer for 2-3 minutes until slightly thickened.
  5. Sprinkle the shredded cheddar cheese over the top and cover the skillet. Let it sit for 2-3 minutes until the cheese is melted.
