Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow the mixture to simmer for 2-3 minutes until slightly thickened.
- Sprinkle the shredded cheddar cheese over the top and cover the skillet. Let it sit for 2-3 minutes until the cheese is melted.
- Remove from heat and garnish with fresh parsley before serving.
