Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 large cucumber, peeled and diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced strawberries, diced cucumber, red onion, and chopped mint leaves.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and gently toss to combine.
- If using, sprinkle the crumbled feta cheese on top and give it a light toss.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
