Ingredients

  • 8 ounces penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup crumbled feta cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Add the cooled pasta to the vegetable and feta mixture. Pour the dressing over the pasta and toss gently until everything is well combined.
