Ingredients

  • 4 cups seedless watermelon, cubed
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • 2 tablespoons lime juice (about 1 lime)
  • 2 tablespoons honey or agave syrup (optional, adjust to taste)
  • 2 cups sparkling water
  • Ice cubes

Instructions

  1. In a blender, combine the watermelon cubes and lime juice. Blend until smooth.
  2. Strain the watermelon juice through a fine mesh sieve into a large pitcher to remove any pulp.
  3. Stir in the fresh mint leaves and honey or agave syrup, if using. Let it sit for about 10 minutes to allow the flavors to meld.
  4. Just before serving, add the sparkling water to the pitcher and stir gently to combine.
  5. Fill glasses with ice cubes and pour the watermelon mint mixture over the ice. Garnish with additional mint leaves.
