Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup bourbon
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 tablespoon minced fresh ginger (or 1 teaspoon ground ginger)
  • 1 teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)
  • Cooked rice, for serving

Instructions

  1. In a large Crock-Pot, combine the chicken pieces, soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes (if using). Stir well to coat the chicken evenly.
  2. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is cooked through and tender.
  3. Once the cooking time is complete, mix the cornstarch and water in a small bowl until smooth. Stir this mixture into the Crock-Pot to thicken the sauce. Cover and cook for an additional 15 minutes on high.
