Description

A delicious and creamy pappardelle pasta dish with tender chicken and mushrooms, perfect for a comforting meal.


Ingredients

  • 8 ounces pappardelle pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sliced mushrooms (such as cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pappardelle pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook until they are golden brown, about 4-5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Cook for 2-3 minutes until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet and add the drained pappardelle. Toss everything together, adding reserved pasta water as needed to reach desired sauce consistency.
  7. Serve immediately, garnished with fresh parsley.

  • For added flavor, consider marinating the chicken in Italian herbs or lemon juice for 30 minutes before cooking.
