Ingredients
- 2 cups penne pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Pour in the heavy cream and stir to combine. Bring to a gentle simmer.
- Stir in the grated Parmesan cheese and Italian seasoning. Continue to cook, stirring frequently, until the sauce thickens, about 3-5 minutes.
- Add the cooked penne pasta to the skillet and toss to coat the pasta in the creamy sauce. Adjust seasoning with salt and pepper if needed.
- Serve immediately, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for the heavy cream and reduce the amount of cheese.
- Add steamed broccoli or spinach for extra vegetables and nutrition.
