Ingredients
- 2 large cucumbers, sliced
- 1 medium red onion, thinly sliced
- 3 medium tomatoes, chopped
- 1/4 cup white vinegar
- 1/4 cup olive oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/4 cup fresh parsley, chopped (optional)
Instructions
- In a large bowl, combine the sliced cucumbers, red onion, and chopped tomatoes.
- In a separate bowl, whisk together the white vinegar, olive oil, sugar, salt, black pepper, and dried oregano until well combined.
- Pour the dressing over the cucumber, onion, and tomato mixture. Toss gently to coat all the vegetables evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a gentle toss and sprinkle with fresh parsley if desired.
Notes
- For a spicy kick, add sliced jalapeños or a pinch of red pepper flakes to the salad.
- Substitute balsamic vinegar for white vinegar for a sweeter, deeper flavor.
