Ingredients
- 2 cups strawberries, hulled and diced
- 1 cup blueberries
- 2 cups pineapple, diced
- 1 cup kiwi, peeled and diced
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 tablespoon fresh mint, chopped
Instructions
- In a large mixing bowl, combine the diced strawberries, blueberries, pineapple, and kiwi.
- In a small bowl, whisk together the honey and lime juice until well combined.
- Pour the honey-lime mixture over the fruit and gently toss to coat all the fruit evenly.
- Add the chopped mint and stir gently to incorporate.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, either on its own or with cinnamon sugar tortilla chips for dipping.
