Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup salsa
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with cumin, chili powder, salt, and pepper.
- Brown the chicken in the skillet for about 5 minutes on each side.
- Transfer the chicken to a baking dish.
