A delightful and easy-to-make Berry Bliss Cobbler that combines mixed berries with a sweet, buttery batter, perfect for dessert lovers.
Ingredients
- 2 cups mixed berries (fresh or frozen, such as blueberries, strawberries, and raspberries)
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the mixed berries, 1/2 cup of sugar, lemon juice, and vanilla extract. Stir gently to coat the berries and set aside to marinate for about 10 minutes.
- In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
- Gradually add the milk and melted butter, stirring until just combined.
- Pour the batter into a greased 9×13-inch baking dish.
- Spoon the berry mixture evenly over the batter, but do not stir. Sprinkle cinnamon on top.
- Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for at least 10 minutes before serving.
Notes
- For a richer flavor, substitute half of the milk with buttermilk.
- You can also add a scoop of vanilla ice cream on top for a delicious dessert twist.
- If you prefer a less sweet cobbler, reduce the sugar by 1/4 cup.
