A healthy and easy recipe for Blueberry Oat Bars, perfect for snacking.
Ingredients
- 2 cups rolled oats
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1/2 cup almond butter (or any nut butter of your choice)
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the rolled oats, mashed bananas, almond butter, maple syrup, vanilla extract, baking powder, and salt. Mix until well combined.
- Gently fold in the blueberries, being careful not to crush them.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack.
- Once cooled, cut into squares or bars and enjoy!
Notes
- For a sweeter bar, add 1/4 cup of brown sugar or coconut sugar to the mixture.
- You can substitute the blueberries with other fruits like raspberries or chopped apples for a different flavor.
- For added texture, consider mixing in 1/4 cup of chopped nuts or seeds.
