Ingredients
- 2 cups cooked chicken, shredded
- 1 cup rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups chicken broth
- 1 packet fajita seasoning
- 1 cup shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, rice, black beans, corn, bell pepper, onion, chicken broth, and fajita seasoning.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a greased casserole dish.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like zucchini or mushrooms.
- For a spicier version, add jalapeños or hot sauce.
- This dish can be made ahead of time and stored in the refrigerator.
