Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups chicken broth
  • 1 packet fajita seasoning
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, rice, black beans, corn, bell pepper, onion, chicken broth, and fajita seasoning.
  3. Mix well until all ingredients are evenly combined.
  4. Transfer the mixture to a greased casserole dish.
  5. Cover with aluminum foil and bake for 25 minutes.
  6. Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
