Description

A delicious twist on traditional lasagna, featuring layers of tortillas, seasoned meat, beans, and cheese, all baked to perfection.


Ingredients

  • 12 corn tortillas
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  3. Add black beans, diced tomatoes, cumin, chili powder, salt, and pepper to the meat. Stir to combine and heat through.
  4. Spread a thin layer of salsa on the bottom of a baking dish.
  5. Layer 4 tortillas over the salsa, followed by half of the meat mixture and a third of the cheese.
  6. Repeat the layers, ending with tortillas on top and the remaining salsa and cheese.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  8. Let it cool for a few minutes before slicing and serving.

Notes

  • For a vegetarian version, substitute the meat with additional beans or vegetables.
  • Feel free to add toppings like sour cream, avocado, or cilantro before serving.
