Ingredients

  • 8 ounces bow tie pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the bow tie pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are tender.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Add the diced tomatoes (with their juice), Italian seasoning, salt, and pepper. Bring the mixture to a simmer and cook for about 5 minutes.
  6. Combine the cooked bow tie pasta with the sausage mixture, tossing to coat evenly.
  7. Serve hot, topped with grated Parmesan cheese and fresh basil leaves if desired.

Notes

  • For a lighter version, substitute turkey sausage for the Italian sausage and use whole wheat bow tie pasta.
