Description
Mini Fruit Pizzas are a fun and delicious dessert made with a cookie base topped with cream cheese and assorted fresh fruits.
Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup assorted fresh fruit (strawberries, blueberries, kiwi, etc.)
- Mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly with the back of a spoon.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
- In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Once the cookies are cooled, spread a layer of the cream cheese mixture on top of each cookie.
- Top with assorted fresh fruit and garnish with mint leaves if desired.
Notes
- For a gluten-free option, substitute the all-purpose flour with a gluten-free flour blend.
- Try adding a drizzle of honey or a sprinkle of cinnamon over the fruit for extra flavor.
