Description
A delicious and comforting Cheesy Chicken Burrito Casserole that combines shredded chicken, black beans, corn, and cheese for a satisfying meal.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups cooked rice (white or brown)
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
- Tortilla chips for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, chili powder, cumin, garlic powder, onion powder, and cooked rice. Mix well until all ingredients are evenly combined.
- In a greased 9×13 inch baking dish, spread half of the chicken mixture evenly across the bottom.
- Layer half of the shredded cheddar cheese over the chicken mixture.
- Spread the remaining chicken mixture on top, followed by the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for 5 minutes. Drizzle sour cream on top and sprinkle with fresh cilantro if desired.
- Serve with crushed tortilla chips on the side or sprinkle them on top for added crunch.
Notes
- For a spicier version, add diced jalapeños or use spicy salsa.
- Substitute ground turkey or beef for the chicken to switch up the protein.
