Description

A delicious and hearty Reuben Casserole that combines corned beef, sauerkraut, Swiss cheese, and rye bread, topped with Thousand Island dressing.


Ingredients

  • 2 cups cooked corned beef, chopped
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded
  • 1 cup rye bread, cubed
  • 1/2 cup Thousand Island dressing
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, rye bread, Thousand Island dressing, garlic powder, onion powder, and black pepper. Mix well until all ingredients are evenly coated.
  3. Transfer the mixture to a greased 9×13-inch baking dish, spreading it out evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and let it cool for about 5 minutes.
  6. Garnish with sliced green onions before serving.
