Instructions

  1. Begin by toasting the slices of whole grain bread until golden brown.
  2. While the bread is toasting, fill a medium saucepan with water and bring it to a gentle simmer over medium heat.
  3. Crack each egg into a small bowl, then gently slide them into the simmering water one at a time. Poach the eggs for about 3-4 minutes for a runny yolk or longer if you prefer a firmer yolk.
  4. While the eggs are poaching, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, then stir in the lemon juice, and season with salt and pepper to taste.
  5. Once the eggs are done, use a slotted spoon to carefully remove them from the water and place them on a paper towel to drain.
