Ingredients
- 2 ripe avocados
- 4 large eggs
- 4 slices of whole grain bread
- 1 tablespoon lemon juice
- Salt, to taste
- Pepper, to taste
- Red pepper flakes (optional)
- Fresh herbs (such as cilantro or parsley, for garnish)
Instructions
- Begin by toasting the slices of whole grain bread until golden brown.
- While the bread is toasting, fill a medium saucepan with water and bring it to a gentle simmer over medium heat.
- Crack each egg into a small bowl, then gently slide them into the simmering water one at a time. Poach the eggs for about 3-4 minutes for a runny yolk or longer if you prefer a firmer yolk.
- While the eggs are poaching, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, then stir in the lemon juice, and season with salt and pepper to taste.
- Once the eggs are done, use a slotted spoon to carefully remove them from the water and place them on a paper towel to drain.
- Spread the mashed avocado evenly over the toasted bread slices.
- Top each slice with a poached egg and sprinkle with red pepper flakes, fresh herbs, and additional salt and pepper if desired.
- Serve immediately and enjoy your delicious avocado toast!
