Ingredients
- 2 large cucumbers, diced
- 4 medium tomatoes, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine the diced cucumbers, tomatoes, red onion, and parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and black pepper until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, include 1/2 cup of diced bell peppers.
- To make it a heartier dish, add 1 cup of cooked quinoa or chickpeas.
