  • 1 pound sirloin steak, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter

  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are golden brown and tender.
  4. While the potatoes are roasting, season the steak bites with salt and pepper.
