Ingredients
- 1 pound sirloin steak, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
- Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are golden brown and tender.
- While the potatoes are roasting, season the steak bites with salt and pepper.
- In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the steak bites in a single layer and sear for about 2-3 minutes on each side until browned. Cook in batches if necessary to avoid overcrowding the pan.
- Reduce the heat to medium and add the butter, minced garlic, thyme, and rosemary to the skillet. Stir to combine and cook for an additional 2-3 minutes until the garlic is fragrant and the steak bites are cooked to your desired doneness.
- Remove the skillet from heat and toss the cooked steak bites with the garlic butter sauce.
- Serve the steak bites alongside the roasted potatoes, garnished with fresh parsley.
