  • 2 medium zucchinis, sliced into half-moons
  • 1 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat a large skillet or wok over medium-high heat. Add the vegetable oil and allow it to heat for about 1 minute.

  3. Sprinkle the garlic powder, onion powder, salt, and pepper over the zucchini. Stir well to combine.
  4. Drizzle the soy sauce and sesame oil over the zucchini. Continue to stir-fry for an additional 2-3 minutes until the zucchini is cooked through but still crisp.

  6. Garnish with chopped green onions before serving.

Notes

  • For added flavor, toss in some sliced mushrooms or bell peppers along with the zucchini.
  • To make it a complete meal, serve the stir-fried zucchini over cooked rice or quinoa.
