Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • ½ cup butterscotch sauce
  • ½ cup chocolate sauce
  • Food coloring (purple, blue, and pink)

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract and mix until combined.
  4. Add the eggs one at a time, mixing on low speed after each addition just until incorporated. Be careful not to overmix.
  5. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  6. Divide the cheesecake batter into three bowls. In one bowl, mix in the butterscotch sauce. In the second bowl, add the chocolate sauce. In the third bowl, leave the batter plain.
  7. Add a few drops of food coloring to each bowl to create vibrant colors: purple for the butterscotch, blue for the chocolate, and pink for the plain batter.
  8. Spoon dollops of each colored batter into the prepared crust, alternating colors to create a swirling effect. Use a knife or a skewer to gently swirl the colors together for a galaxy effect.
  9. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
  10. Remove from the oven and refrigerate for at least 4 hours, or overnight, before serving.
