  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup crusty bread, cubed
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.
  2. Stir in the thyme, parsley, salt, and pepper. Cook for another 2 minutes until fragrant.
  3. Add the minced garlic and cook for 1-2 minutes, stirring frequently to prevent burning.
  4. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
  5. Stir in the heavy cream and bring the soup back to a gentle simmer.
  6. Add the cubed bread and Parmesan cheese, stirring until the cheese is melted and the bread is softened.
