Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/4 cup diced green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 jalapeño, finely chopped (optional for heat)
  • Tortilla chips for serving

Instructions

  1. In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and black pepper. Set aside.
  2. In a large skillet over medium heat, add the seasoned shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.
  3. In the same skillet, reduce the heat to low and add the cream cheese. Stir until melted and smooth.
  4. Gradually add the cheddar and Monterey Jack cheeses, stirring continuously until fully melted and combined.
  5. Stir in the diced tomatoes, green onions, and cooked shrimp. If desired, add the chopped jalapeño for extra heat.
  6. Cook for an additional 2-3 minutes until everything is heated through. Remove from heat and stir in the cilantro, if using.
  7. Serve warm with tortilla chips.

  • For a smoky flavor, add a teaspoon of smoked paprika or a dash of hot sauce to the cheese mixture.
