A creamy and delicious Shrimp Queso Dip perfect for parties and gatherings.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes (fresh or canned)
- 1/4 cup diced green onions
- 1/4 cup chopped fresh cilantro (optional)
- 1 jalapeño, finely chopped (optional for heat)
- Tortilla chips for serving
Instructions
- In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and black pepper. Set aside.
- In a large skillet over medium heat, add the seasoned shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.
- In the same skillet, reduce the heat to low and add the cream cheese. Stir until melted and smooth.
- Gradually add the cheddar and Monterey Jack cheeses, stirring continuously until fully melted and combined.
- Stir in the diced tomatoes, green onions, and cooked shrimp. If desired, add the chopped jalapeño for extra heat.
- Cook for an additional 2-3 minutes until everything is heated through. Remove from heat and stir in the cilantro, if using.
- Serve warm with tortilla chips.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika or a dash of hot sauce to the cheese mixture.
- Substitute the shrimp with cooked chicken or black beans for a different protein option.
