Ingredients
- 2 ripe avocados
- 4 large eggs
- 4 slices of whole grain bread
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh herbs (such as cilantro or parsley) for garnish
Instructions
- Begin by boiling the eggs. Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.
- While the eggs are cooking, toast the slices of whole grain bread until golden brown.
- After the eggs have finished cooking, transfer them to a bowl of ice water to cool for about 5 minutes. Once cooled, peel the eggs and use a grater to grate them into a bowl.
- In a separate bowl, mash the ripe avocados with lemon juice, salt, and black pepper until smooth but still slightly chunky.
- Spread the mashed avocado mixture evenly over the toasted bread slices.
- Top each slice of avocado toast with a generous amount of grated egg.
- Sprinkle red pepper flakes on top if desired, and garnish with fresh herbs.
