Ingredients

  • 2 ripe avocados
  • 4 large eggs
  • 4 slices of whole grain bread
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh herbs (such as cilantro or parsley) for garnish

Instructions

  1. Begin by boiling the eggs. Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.
  2. While the eggs are cooking, toast the slices of whole grain bread until golden brown.
  3. After the eggs have finished cooking, transfer them to a bowl of ice water to cool for about 5 minutes. Once cooled, peel the eggs and use a grater to grate them into a bowl.
