Ingredients

  • 8 ounces cheese tortellini (fresh or frozen)
  • 4 slices bacon, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and place it on a paper towel to drain, leaving the bacon fat in the skillet.
  3. Add olive oil to the skillet with the bacon fat. Sauté the minced garlic for about 1 minute until fragrant.
  4. Lower the heat and stir in the heavy cream and softened cream cheese. Cook until the cream cheese is melted and the sauce is smooth.
  5. Add the grated Parmesan cheese, stirring until well combined. Season with salt and pepper to taste.
  6. Add the cooked tortellini to the skillet and toss to coat in the creamy sauce.
  7. Stir in the crispy bacon and cook for an additional 2-3 minutes until heated through.
  8. Serve immediately, garnished with fresh parsley.

  • For a lighter version, substitute half-and-half for heavy cream and use reduced-fat cream cheese.
