A delicious and healthy Strawberry Banana Oatmeal Bake perfect for breakfast or a snack.
Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 2 cups milk (dairy or non-dairy)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.
- In another bowl, mix the mashed bananas, milk, honey or maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until fully incorporated.
- Gently fold in the sliced strawberries and nuts or chocolate chips if using.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and set.
- Allow to cool for about 10 minutes before slicing and serving.
Notes
- For added flavor, try mixing in a teaspoon of almond or coconut extract.
- Substitute the strawberries with blueberries or raspberries for a different fruit twist.
