Description
Cucumber Cream Cheese Sandwiches are a refreshing and delightful snack or appetizer, perfect for any occasion.
Ingredients
- 8 slices of white or whole wheat bread
- 8 ounces cream cheese, softened
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large cucumber, thinly sliced
- Fresh parsley or dill for garnish (optional)
Instructions
- In a medium bowl, combine the softened cream cheese, dill, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well combined.
- Spread an even layer of the cream cheese mixture on one side of each slice of bread.
- Layer the cucumber slices evenly on four of the bread slices, covering the cream cheese.
- Top with the remaining four slices of bread, cream cheese side down, to form sandwiches.
- For a neat presentation, trim the crusts off the sandwiches and cut them into quarters or triangles.
- If desired, garnish with fresh parsley or dill before serving.
- Chill the sandwiches in the refrigerator for about 30 minutes before serving for the best flavor.
Notes
- For a twist, add thinly sliced radishes or smoked salmon to the cucumber layer.
- Substitute the cream cheese with hummus for a lighter, dairy-free option.
